Try my Paella Recipe this Thanksgiving!

I'm so thankful for all of my wonderful clients! If you're getting a little tired of Turkey, or want to add something different in addition to your turkey, try my recipe!


Ingredients: 4

-5 chicken things - Bone-in, skin-on

1 lb chorizo

1 Lb raw deveined shrimp

1 red bell pepper

1 yellow or orange bell pepper

1 bunch parsley

4 cups chicken stock

Saffron

3 tbl chopped garlic

1 medium yellow onion

3 tbl extra virgin olive oil

1/2 cup white wine

1 can fire roasted tomatoes

3-4 cups paella rice


Change it up this Thanksgiving, or maybe make a Paella in addition to a turkey to give your family options. My Great grandparents are from Spain. They emigrated to the Bay Area and settled in Walnut Creek of all places. I grew up with my Grandmother cooking Paella. I often cook this dish to honor her (and my) heritage. It's easy, quick, hard to mess up and a real crowd pleaser!


Preheat oven to 450 degrees

Using a Paella pan (or large cast iron pan), deeply brown both sides of the chicken in olive oil


Add in the chopped onion, garlic and some salt/pepper. Cook for about 5 minutes.

Then add in the chorizo, wine and can of fire roasted tomatoes. Boil for about 5 minutes.


Scatter the rice over the top of the liquid. Try to avoid pouring it on top of the chicken (or it won't cook). Stir the rice occasionally, and try to get all over it to submerge in liquid.


Mix a pinch of saffron with the chicken stock and pour into the dish and carefully stir.


Place the pan in the oven for about 5 minutes, until it begins to harden.Now add the bell peppers evenly around the pan and gently press into the rice, close the oven.


Now heat up a cast iron pan to high heat and drizzle in some canola oil. In a bowl, add the following seasonings to the shrimp: garlic granules/powder, paprika, onion powder, brown sugar.


Toss the shrimp into the hot pan and sauté for several minutes until they turn a nice golden color.


Open the oven and spread the shrimp evenly onto the paella.


Cook for total of 20 minutes


Garnish with fresh chopped parsley
